Spinach Cheese Muffins

If you are trying to lose weight than these protein pack savoury muffins are ideal meals after workout or can serve as hunger pangs at anytime through out the day. Easy to Carry n loaded with protein & vitamins. These muffins have spinach, carrot, cashew, almond and cheese.

Recipe of Spinach Cheese Muffins:
Unsalted Butter- 6 Tbsp
Salt- 1/4 tsp
Carrot- 1/4 cup (grated)
Mozzarella Cheese- 1 cup (grated)
Spinach - 1 cup (Finally Chopped)
Chilli Powder- 1/4 tsp
Pepper Powder - 1/4 tsp
Cashew - 2 Tbsp (crushed)
Milk- 1 cup
Curd - 1/4 cup
Flour/ Maida - 1 1/2 cup
Baking Powder - 2 tsp
Baking Soda - 1/2 tsp
Almond - 2Tbsp (Finally chopped)
Green chillies- 2 (Finally chopped)
Preheat the Oven at 175 degree.
Place cupcake liners in muffin tray.
Heat milk & butter together than remove it from flame.
Allow butter to melt. Cool the mixture and than add curd and whisk it.
In another bowl, mix flour, salt, baking soda, baking powder, chilli powder and pepper powder.
Add carrot, crushed & dusted cashew, chopped almond, spinach in butter mixture and mix.
Add cheese to the butter mixture. Than add flour mixture into the butter mixture and whisk gently.
Bake it for 35 to 40 minutes until top turns golden color.
Remove it from oven and serve hot with mint chutney.
